For me, every rich and creamy bite of RO*TEL and VELVEETA Queso dip is oozing with nostalgia. Just one dunk transports me back to my childhood self, a gangly thing with a never-ending appetite. Years later, I still remember that first taste like it was yesterday, every time I make the recipe. And I do make the recipe – all the time! Its the star of every tailgate, birthday and awards show party I throw! But I'll never forget my first time.
I can remember it all too well. I was at my first real sleepover, a shy thing amidst a gaggle of other awkward pre-teens. During a particularly intense round of Mall Madness, my friend's mother interrupted the heated battle, toting a steaming crockpot and a giant bag of chips. The other girls made a mad dash for the dip, and I followed. The cheesy, spicy dip was unlike anything I had ever encountered. "What is this stuff?" I exclaimed. I knew my life would never be the same.
Later, I regaled my mother with stories from the sleepover, and I proudly announced that my "new most favorite food" was, "like, something totally awesome called Queso, and could we please have it for dinner every night." And from then on, it was the star at all three of her daughters' sleepovers.
That was eighteen years ago, and to this day if somebody serves Queso you can bet I'm the first one to the pot, fiending like a ravenous teenager. It's hard to believe that just two ingredients, RO*TEL and VELVEETA, make a dip so delicious that it withstands the rigorous test of time. The now-famous recipe has seen its fair share of slumber parties and potlucks, spontaneous gatherings and never-ending game days. In my family we call that a classic.
Queso, with the creamy goodness of VELVEETA combined with RO*TEL's zesty blend of tomatoes and green chilis, might just be the best dip out there. Of course there are plenty of ways to get creative with it, and these days I serve the original two-ingredient recipe alongside plenty of fixin's and flair. I love to offer an assortment of accoutrements — think bountiful crudité, spicy fresh chorizo, sliced jalapeños, black beans, and even Mexican rice. Lots of options allow hungry revelers (with different sized appetites!) to make each and every bite of Queso their own.

(10 ounce) can RO*TEL® Original Diced Tomatoes & Green Chilies

(16 ounce) package VELVEETA®, cut into 1/2-inch cubes
Instructions

Combine undrained RO*TEL and VELVEETA in a medium saucepan. Cook over medium heat until VELVEETA is melted completely and mixture is blended, stirring frequently, about 5 minutes.

Serve warm as a dip with tortilla chips and various accompaniments, such as Mexican chorizo, sliced jalapeños, black beans, sour cream, rice, and crudité.
Recipe Notes
To make in microwave, combine undrained tomatoes and VELVEETA in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until VELVEETA melts, stirring after 3 minutes. Remove from microwave; stir until mixture is blended. CAUTION: Dish will be hot; use hot pads. For a double recipe, microwave on HIGH 8 minutes or until VELVEETA melts, stirring after 5 minutes.
